My Holiday Wish List

Can you believe it’s almost Christmas?! I can’t. I’m not a big Gift Guide person, but I LOVE reading what people are actually wishing for this holiday season. For this reason, I’ve created a list with links (click the titles), of some items I’d be so grateful to receive this year. And YES I totally realize this is not a very FUN Christmas list, but when you’re almost 30, the holidays become a time when you’re excited to fill your home with things you actually need.

PLANNER AND PEN ORGANIZER:

I am planner obsessed. I would be nowhere without my planner that I hand write in every day. For the past few years I have created my own customized planner from Maydesigns, but this year for 2020 I purchased a dated and already designed planner (More to come on in a dedicated post soon). I am so excited for my new planner but it’s one downside is that it doesn’t have a space for me to hold my pens and stickers and such. Therefore, I’m asking for this organizer so I can put my planner inside and carry everything I need with me wherever I go. Any guesses as to what planner I decided on? Stay tuned until later this month to find out.

BOOK BUCKET LIST POSTER:

I purchased the movie version of this poster for Mikey last year for Christmas and we are still obsessed with it. Since we know what a reader I am, I also am hoping to get this one (cough, dad or Mikey, cough). I love that these are more interactive than a traditional list and they make a great stocking stuffer too! (Hint hint as to what post is coming next week….)

SOURDOUGH BREAD MAKING SUPPLIES:

One of my big goals for 2020 is to perfect how to make my own sourdough bread. Good bread making is a true art and I have been waiting until I am debt free to purchase the supplies to get started on this goal. There are some basic supplies you need and I really hope I get some of them.

GIFT CARD TO THRIFTBOOKS.COM:

Are we shocked at all that this is on my list? I will never stop buying books and I LOVE buying them through thriftbooks so that I am purchasing secondhand!

BOOKLIGHT:

I can’t believe I don’t own a book light but I figured it was time I ask for one. Very often I’m reading in a room that is dim at night and I hate turning on big and bright lights so I can see better. This one from Amazon looks nice and adorable.

RUNNING SOCKS:

Yes I actually have socks on my Christmas list this year. Hahah talk about feeling almost 30! My favorite brand has been discontinued but these pairs look similar to the ones I love. I prefer a tab on the back of my socks for optimal comfort when I’m running or cycling.

APRON:

Would you believe that I don’t own an apron? I guess I just embrace the mess when I’m cooking, but since I started Biscuit Sunday a few months ago, I have decided that it is time to own an apron. I love the look of a neutral gray or cream apron!

Andrea's Pantry Staples

I have wanted to share this list for along time because I believe a well stocked pantry is VERY important to minimize the overwhelm of cooking meals at home. When I say well stocked I don’t mean that you need to have everything under the sun in there either. I simply mean that you have the basic building blocks to create a really great meal at any time. These are the items that can usually be found in my cupboards. What does your pantry look like? Comment below and let me know!

  1. Jasmine or Basmati Rice: These are my favorite two and I always have them on hand because they are a great staple gluten-free item.

  2. Brown Rice: I am not a huge fan of brown rice, but I do like it Chicken Tikka Masala because it’s texture holds up nicely to the sauce, so I keep a little of this on hand.

  3. Almond Flour: I make my own almond flour from the process of making my own almond milk. If you want to see how I do that, CLICK HERE!

  4. Oat Flour: This is another common gluten-free flour that you find in a lot of recipes, so I like to keep it on hand.

  5. Oats: I always have either GF regular oats or quick cooking steel cut oats on hand because I eat oatmeal so often for breakfast. It will always be my go-to breakfast because I love it so much.

  6. Diced Tomatoes: These can be used in so many different styles of cuisines so I always keep them on hand. They are perfect for a super quick tomato sauce too.

  7. Tomato Paste: I love keeping tubes of tomato paste on hand (usually from Trader Joe’s) because they can add an extra dimension of flavor to so many meals. I also need it for homemade tomato sauce, so….duh!

  8. Tubes of Ginger Paste: I love the Trader Joe’s tubes of minced ginger because then you don’t have a knob of ginger going bad in your fridge when you only need a tiny piece for a recipe. I love to season soups, bowls, chicken, etc, with a ginger/garlic combo.

  9. Broths (Veg and Chicken): I loooove to make soups, so these are an obvious must have. I only use chicken and veggie broth in my home so that’s all I stock. I always buy low sodium broths so I can control the salt level.

  10. Great Northern Beans: These are one of my favorite soup beans.

  11. Black Beans: A necessary for any Chipotle inspired burrito bowl or mexican inspired dish.

  12. Kidney Beans: I love how big kidney beans are so they really bulk up a meal.

  13. Nori Sheets: Great for sushi bowls and for making homemade miso soup.

  14. Almond Butter/Peanut Butter: I like to freshly grind mine at my grocery store and choose whatever I’m in the mood for.

  15. Coconut Sugar: I use coconut sugar in place of regular granulated or brown sugar whenever I can. I use it as my sweetener for my oatmeal too.

  16. Chia Seeds: I put chia seeds in my smoothies and in my oatmeal.

  17. Flax Seeds: I put flax in every smoothie I make (technically I store these in the fridge).

  18. Hemp Seeds: These also go in my oatmeal.

  19. Chocolate Chips: I keep them for obvious reasons, but I love to snack on 5-10 when I have a sweet tooth at night.

  20. Arrowroot Powder: I use this in place of cornstarch as a thickening agent, but it’s also found in a lot of GF recipes.

  21. Almonds: I make my own almond milk so I always have a big Costco bag of these on hand.

  22. Salsa Verde (specifically from Trader Joe’s): I love to keep salsa on hand for an easy snack, but I also love pouring a jar over chicken breasts in the crockpot for an easy dinner.

  23. Tomato Sauce (canned): I only keep the little cans of this on hand for when I make Chicken Tikka Masala.

  24. Dry Red Wine: This is my preference when it comes to drinking wine, but I also like to have it on hand to add to the base of my tomato sauces. It adds such a richness to your tomato sauce.

  25. Rice Paper Sheets: These are a quick easy dinner or lunch if you have lots of veggies on hand to use up. You can simply wet them and make spring rolls in no time at all.

  26. Konjac Noodles: These are a new favorite of mine. They are almost calorie-less, gluten-free and I really like the texture. They are not as sticky as a rice noodle and have a little bit more of a bite, so I prefer them to rice noodles.

  27. Red Lentil/ Other Gluten Free Pastas: Pasta will always be my go-to easiest meal to make for dinner, so I like to keep some good GF options on hand. I love red lentil pasta the most, but chickpea is also tasty!

  28. Lentils: These are an easy way to bulk up a soup, so I love having a big jar of them to throw in vegetarian soup.

  29. Polenta: Another GF alternative to eating a wheat product with your meal. The Italian in me wishes I could easy cheesy polenta every night.

How to Cook More (Part 2)

A little over a year ago, I wrote a post called “How to Cook More” and you guys really loved it. Click here to read that one first and learn the inspiration behind it.

I wanted to write a follow up post because as I’m writing my cookbook, I’m thinking a lot about the topic of how to inspire people to get into their kitchens more. So I’m back with more ways to share with you on how to cook more. As usual, I love when these posts can be the start of a bigger conversation, so be sure to comment below and let me know what really got you into cooking.

Start with one-pot recipes.

I often find that the kitchen can be very overwhelming for people and for most of us, the worst part about cooking is all the huge mess we can make. Also the thought of having to manage multiple burners or things in the oven can be stressful. To that I say, start with one-pot meals. Whether it’s an entire cookbook you purchase on one-pot meals, or you search it on Pinterest, getting your feet wet with simple recipes will help you see that you CAN do it. Then once you feel comfortable, you can dive into dishes with a little more complexity and learn new skills.

Clean as you go.

To go off of the last topic, the mess created from cooking a meal can deter you from starting in the first place. So often we create this huge mess and at the end think, '“well that wasn’t worth it'…” and never make the recipe again. Be strict with yourself and anytime you have 3 minutes or so, wash a dish or two that you are no longer using. This way, when the meal is done, all you have to clean is the dishware you ate on and maybe a pot or serving bowl. If you deal with anxiety you may also find cooking less challenging if the environment you are doing it in is tidy and calm.

Start small.

Sometimes when we make goals we are all or nothing. We go all out and eventually get burnt out, so I suggest instead of saying, “I’m going to cook dinner every night this week and no take out'“, challenge yourself to cooking just one or two nights during the week instead. Once you create that habit, you can increase the amount of cooking you do, little by little.

Start by learning how to make your favorite foods.

If learning how to make your favorite foods at home isn’t a source of inspiration, then I don’t know what is! I think we often think that we have to learn how to cook only healthy meals, but if you’re just getting started in the kitchen, learning how to make your favorite foods will help you become confident and really enjoy the experience. I often challenge myself to try tons of recipes for that one meal until I find my favorite.

Invite people over to eat.

Sometimes if we live alone or with our significant other, it can seem like a lot of work to cook for a small amount of people. Invite some friends over and give meaning to the meal you are preparing. Cooking for the people I love is my favorite thing to do and you might find that you really enjoy it too! Maybe vow to yourself that you want to start hosting small dinners for friend’s birthdays or even just because it’s Friday and you made it through another week! Whatever the occasion, sharing the fruits of your labor can be a great source of inspiration for getting in the kitchen to do the work.

A Cookbook Gift Guide

Welcome back to gift guide week here at Andrea Fontana Beauty! Just in case you missed my two previous posts here are the links for them; The Skincare Nerd’s Gift Guide & The Makeup Lover’s Gift Guide.

Today we are talking…COOKBOOKS! One of my favorite kinds of books.

If you’ve been following me for awhile you probably know how obsessed I am with them. My collection is past 50 at this point so I thought I’d offer a few suggestions and describe who I think they would be best for.

The Traditional or Brand New Cook

If you have someone on your list who is new to cooking I highly recommend either ‘The Joy of Cooking’ cookbook or ‘The Fannie Farmer Cookbook’. I have both and refer to them often for classics. They would be a great staple for any college student, newlywed or even someone who has found a new love for cooking, because they are filled with basic recipes that everyone needs.

If your gift is for a cook who is unfamiliar in the kitchen, I highly recommend ‘Salt, Fat, Acid, Heat: Mastering the Elements of Good Cooking’ because it teaches you so much about what it takes to make a great meal. The Netflix series is also AMAZING and not to go off on a tangent but you should watch it ASAP.

The Gluten Free Cook

I’ve talked a lot about ‘True Roots: A Mindful Kitchen’ a lot, especially on my Instagram. I have made so many of the recipes and they are so amazing. If someone has dietary restrictions like gluten, dairy, or refined sugars, this would make a great gift.

The Fit Cook

I received ‘Bobby Flay Fit’ for Christmas last year and I’ve used it so much, there’s a burn mark on the cover from the coils of my stove. If the person you’re shopping for is into fitness and healthy eating, but doesn’t like sacrificing flavor, this is a great option! The recipes are easy and rely on using a lot of great spices to create clean and delicious meals.

The Pasta-Obsessed Cook

If the person you are shopping for likes pasta or noodles (I mean who doesn’t though…) these are two of my favorite cookbooks that I have actually used quite a bit in the last few years. ‘The Ultimate Pasta and Noodle Cookbook’ has recipes from all types of cuisines, not just Italian. It’s again a great reference book. My other recommendation would be for someone who LOVES Italian pasta and I’ve talked about it before on here. ‘250 True Italian Pasta Dishes’ is great for those who want to learn which types of pastas go with which sauces and how to choose veggies to add in. It has many great combinations and even a section with fast weeknight recipes.

The Beauty Loving Cook

I know I just mentioned this cookbook in my Skincare Gift Guide, but I have to mention it again in case you missed that post. If you are gifting to a lover of makeup, skincare or nutrition, ‘Eat Beautiful’ is an amazing collection of in season recipes to promote healthy skin and beauty.

The Italian Food Cook

Did you really think I wouldn’t include an Italian section. My pick for this year goes to a cookbook my boyfriend got me for my birthday one year because he wanted me to cook from it. ‘The Sopranos Family Cookbook’ is not only full of delicious traditional recipes, but it’s also really fun to look through.

The Cook Who Loves to Give Back

If you have a friend to gift this season that loves to give back, this would be a great option for them. The ‘America The Great Cookbook’ is a collection of signature dishes and family recipes from chefs all over the country. So not only is it a great collection of different types of cuisines, but the proceeds go towards helping ‘No Kid Hungry’ fight childhood hunger.

Now if you have a cookbook addiction like me or you’re shopping on a budget this holiday season, don’t forget that thrifted/used books are a great way to reuse and recycle books! Tips for Hosting an Easy Dinner Party

It is no secret that I love to cook. Feeding people is my love language and my house will always be open to transform empty bellies into full and happy ones. I hosted a dinner party the other night and when I shared a few snippets of it on Instagram, a few of you reached out and asked me to share my tips on how to make hosting a dinner party easier. I am proud to say that it was amazing and I was able to create a dinner party magic in less than 2 hours. You read that right. I started cooking/setting up around 4:45 and my guests walked through the front door at 6:30. So how did I do it? I will show you how.

Planning:

In order to whip something like this up so quickly, you have to plan. I did a few major things that made this night super easy for me:

  1. I planned my menu out at least a week in advance and checked with all of my guests that they were fans of foods that not everyone loves, i.e., mushrooms in this case. I chose dishes that were not super detailed and needy, so that I could be cooking multiple things at once (I’ll get more into this in a little bit).

  2. I grocery shopped the night before and left everything out on my counter that wasn’t perishable, and put everything together in the fridge that I’d need. This allows you to pull everything out and not go searching through your cupboards/fridge trying to find each ingredient. You’d be surprised how much time you can save when you don’t have to keep walking to the pantry.

  3. I made a rough timeline of what I wanted to cook when. For example, my appetizer was something that needed to sit and stew a little, so I started this first. This allowed me to not have to think about what I needed to do next because it was all written down for me. I just check things off my list.

Decor:

When it comes to decor, I love to have things like books, place mats, candles and such all around. Instead of getting extra decor out to decorate my table, I just used what was already sitting out around me. I walked around my living room and grabbed things like pumpkins and candle sticks, and brought them to my table. I have a little storage cupboard by my front door, who’s top houses my keys and such, but inside I actually hide away all of my entertaining dishes, so that when it’s time to bring them out, they are all in one spot.

Personally, I find a rustic and cozy atmosphere to be the most appealing at a dinner party, so don’t get to stressed about things matching. In case you didn’t notice in the pictures above, I only had four of the gray and white tassel place mats, so I just grabbed a gray and white striped tea towel from my kitchen and added it for my 5th place setting. I’m not big on patterns matching perfectly but I generally always buy my entertaining dishes in neutral colors so that they always go together well enough.

Also, don’t be afraid to get out of the box and get creative with items that might not normally be used on the table. I like playing with height, so I stacked some big and really old coffee table books about Italian food right in the center of the table and placed my bowls for olives on them.

Cooking:

Now for the main portion of the planning and why this dinner party was so easy, did I mention everything was Gluten and Dairy Free? Here are the things I did to make my life easy:

  1. I chose recipes that didn’t need to be babysat, but would still wow my guests.

  2. I baked my pumpkin spice cake the morning of the dinner party at 6:30 am and did yoga while it was in the oven. BAM Kill two birds with one stone people. Also, you will automatically fill your house with the aroma of dessert all day which is a great way to start off prepping for a dinner party!

  3. My appetizer was a slow cooked tomato and garlic spread for crackers (recipe to come in a special announcement). I also set out two kinds of olives and would normally do cheese as well if the crowd wasn’t dairy-free.

  4. I also made a super easy and light mushroom soup because once the onions and mushrooms are sauteed and seasoned, it literally sits on the corner burner and stews for a little while, which means you can do other stuff! (Recipe also coming in that super exciting announcement…haha)!

  5. My entree was a homemade vodka sauce (I swear by this recipe from Rachael Ray) over brown rice and red lentil pastas. Can you guess why I picked it? You’re right, it’s super quick and easy and only stews on the stove for like 20 minutes! But you’re actually making a homemade sauce so it tastes like heaven.

If there is one piece of advice I can give you for hosting a dinner party it’s this….CLEAN YOUR DISHES AS YOU GO! There is nothing worse than having the world’s best dinner party full of laughter and happy tummies and then everyone walks out the door and you have a WHOLE kitchen to clean and you get depressed and want to ignore it and walk straight to your bedroom to sleep instead. So I always do this… While I’m cooking I wash every dish I can at every chance I get. I’ll even start placing food in their serving plates so that I can wash the pots they were cooked in. I even go as far as to wipe up my counters and stove before anyone arrives. This way the only things left to clean afterwards are the dishes you eat on and the serving plates. You can quickly rinse all the food off so they are mostly clean, load them in the dishwasher or leave them in the sink for the next morning and get to sleep instead.

I love dinner parties because of how relaxed and enjoyable they are. If you plan ahead and do certain tricks, you can make it enjoyable to host as well. How I make Almond Milk/Flour:

This post has been so highly requested and I'm happy to finally write it for you. After doing my elimination diet a few months ago and feeling what it felt like to be eating 100% unprocessed, I was hooked. I've always had the belief that life is about balance in many aspects. I would never want to deprive myself of the foods I love but also think there is an alternative to eating heavily processed treats. I have kind of always operated on the idea that if I can make it myself I'm allowed to eat it.

Almond milk isn't necessarily bad for you, but when you buy it in the stores it unfortunately has to have stabilizers and other ingredients that keep it fresh for you to enjoy at home. Making almond milk eliminates all of this processing and tastes SO MUCH BETTER. Plus, since going gluten free I like to have almond meal (aka flour) on hand and it's expensive! Making your own almond milk yields the milk, but also about 1 cup of almond pulp that you can easily turn into meal! This means it's a zero waste process and will save you money, especially if you use almond meal on a regular basis! Today I'm going to take you through how I make my almond milk and turn the pulp into meal!

First let's go over what you will need for this process:
- 1 cup of almonds (I buy mine in a big bag at Costco)
- 7 cups of water
- Vanilla or salt if wanted
- High speed blender or food processor (I use a ninja) --> Here's the one I have and LOVE (Side note: I took FOREVER to decide on a blender and this is the one I went with. I've had it for over a year and use it constantly. I can't recommend it enough if you're looking for a high quality blender but don't want to shell out the money for a Vitamix)
- Glass container to store milk up to 3 or 4 days --> I purchased this one from Amazon
- Nut Milk Bag --> I purchased this Nylon 2-pack from Amazon.

1. You'll need to soak the almonds for at least 4 hours (I usually just do it overnight) in order to soften them and make them easy to blend.

2. Empty the water that the almonds have been soaking in and add the cup of softened almonds, 7 cups of water and a splash of vanilla and sprinkle of salt to the blender. I have made it with no salt and vanilla and it was great too! Choice is up to you. If you're used to unsweetened original almond milk, leave it out!

3. Blend for 2 minutes on a high speed.

4. Pour your blended mixture through the nut bag into a bowl and squeeze all of the liquid out with your hands! I love the nylon ones I purchased from Amazon because they are super easy to hand wash and keep clean (I also use them to strain my kombucha!)

5. Store in your glass container for up to 4 days!

YES It's really that easy! Now for the almond meal:

1. Preheat your oven to 100 or 150 degrees.

2. Spread your almond pulp onto a baking sheet and break up all of the clumps with your fingers. The more liquid you squeeze out the easier this will be.

3. Bake for 1-1.5 hours until the almond meal is dry, checking on it every 15-20 min to make sure it's drying out evenly. 

4. If your blender hasn't ground it fine enough, you can put it back through the food processor, blender or even a coffee grinder to make it finer!

 

One of the cool things about making your own almond milk is that you can flavor it however you want! I cannot wait to add turmeric, cinnamon, and more to my almond milk in the fall to make yummy drinks (Thanks for the suggestion Detroit Wifestyles!)

January Favorites

I'm back with some favorites from the month of January! As you know, I had a rocky start to the new year but I'm happy to say that things have turned around and the second half of the month was amazing! The thing I am most proud of this month is that some of my friendships have grown tremendously and I feel like I went through a lot of self growth. One of my favorite YouTubers mentioned that she often finds that the greatest things come out of challenges and I feel like my January was a great example of this. I don't have a Trader Joe's by me but had heard quite the buzz about this seasoning all over. Luckily a store opened up recently in the city I'm from so when I went home for Christmas I made sure to pick up two bottles because I knew I would love it. I put it on everything; hard boiled eggs, avocado toast, homemade bagels, and more! I highly recommend trying it out ASAP!

If you follow me on Instagram, this first favorite probably comes as no surprise! I received a cookbook (Bobby Flay Fit) that I wanted SO badly, from my beautiful friend Sammy! I have made so many recipes already from it and have loved them all. I highly recommend if you are looking to eat a healthier way but don't want to sacrifice flavor. I use it so much that I even burnt an imprint of the coil from my stove burner into the cover by accident (haha!). I've already mentioned this next favorite a few posts back, but I finished it in only 2 weeks and I CANNOT recommend it enough. Don't let the almost 600 pages scare you away from this amazing story of the life of Cyril Avery growing up in Ireland. It's written well and I couldn't put it down; sometimes getting lost in the pages for hours at a time. 

I received a sample of this facial oil a little while back and when my coveted Rosehip oil ran out and I didn't have any on hand, I grabbed this one and have loved it all month! It's a dry oil made up of Vitamins E and B, apricot kernel oil, coconut oil, and wheat germ oil. I love how it sunk into my skin quickly and didn't leave me feeling greasy which is nice for day time. I love to put on oils with Anti-oxidants to help combat free radicals and pollution throughout the day! You only need a few drops to apply so this bottle would last a long time!

This is my favorite hair product of the moment. It was recommended by a friend Ashley, who is a cosmetologist (as you know I know nothing about hair and rely on friends for help in that area haha). I love this finishing spray because it smells awesome, gives my hair some shine and a slight hold. It's definitely not as strong as a hairspray, but I love it to tame my style when I actually do my hair. It doesn't leave any crazy residues, which I love. 

Love, love love this moisturizer. I've mentioned it before, but it's my go to in colder months or when I've been sick. I had a cold at the beginning of the month and blew my nose so many times that the skin around it was raw and red. This moisturizer saved me (due to the colloidal oatmeal). I highly recommend it for dry skin that can be sensitive. It's one I always keep on hand in case I'm feeling dry.

This one's a classic that I always go back to at least once a year and apparently January was that time. It's great for thick, voluminous lashes and always makes my lashes look amazing. I'm not sure why I ever get away from it haha. Why do we always have to try new mascaras as women? 

I contemplated writing an entire post devoted to these babies, but I couldn't hold off on telling you about them any longer. They are heaven sent if you get blemishes. Always keep them on hand. They are little nude/clear stickers that you put over a blemish at night when you go to sleep. I like to do it before I put my moisturizer on so that they stick well and then apply moisturizer around it afterwards. The trick with these is that you have to wait until there is a white head, then it pulls everything out as you're sleeping and you'll see the white color change in the morning on the sticker. The blemish will still be red in the morning, but it is always so much flatter if not completely flat from pulling everything out. I can't recommend them enough!

My 10 Go-To Week Night Meals

I know this is a beauty blog, but if you follow me on Instagram you probably saw that I asked a poll if you wanted to see these recipes and I got a 100% response of yes! So today I'm sharing my go-to recipes. I usually make something from this list once or twice a week because they are either easy, healthy, or a combination of the two. Some are links to recipes others have created and some are creations of my own!

Tuna Sushi Bowl- I make these sushi bowls all the time (as you can see on my instagram) and I could never get sick of them. They are a great way to get the flavors of sushi, without having to spend all of the time creating and rolling sushi. You can use whatever protein you want, I like to use Ahi Tuna that has been previously frozen (to kill any potential parasites) and cube it. Marinade it in 2 Tablespoons soy sauce, 1 teaspoon rice wine vinegar, 1 teaspoon sesame oil, and a sprinkle of red pepper flakes to taste. I also like to marinade diced cucumbers and green onions with the tuna, and let it all sit in the fridge to chill for 15 min while your rice cooks. To make this extra healthy, use brown rice instead of white and use tons of veggies. I like to include pickled onions, avocado, carrots, radishes....the list goes on and on! Add whatever you like. You can also make this over salad instead of rice and it will really lighten the dish. 

Chicken Tikka Masala- (Click here for Recipe Link) If I ask my boyfriend what he wants for dinner this week, this will always be the first thing he says. I've made it for so many people and everyone loves it. The biggest thing about this recipe is that you have to let the chicken marinade for an hour or the chicken won't be as tender. The only changes I make are not to include jalapeno, I use a little less cream, and I serve it over brown rice. This is definitely a recipe that you can get away with brown rice easily it soaks up the sauce anyways and it's hard to tell the difference. 

Coconut Chicken Chili - (Click here for Recipe Link) This one is a newer recipe for me, but I love it. It's really delicious and light. 

Chicken Milanese- (Click here for Recipe Link)  I grew up eating Beef and Chicken Milanese so I absolutely love this recipe from Ree Drummond. My boyfriend calls this one "the really good chicken" haha.

Taco Salad- I eat these all the time and they are very low carb and high protein. I use the Quorn Meatless Crumbles to keep the meal vegetarian but you could also use lean ground turkey to keep it healthier. I saute onions and garlic for a few minutes to soften and then the 'meat' until it's no longer frozen. Once everything is hot, I add a little water, along with cumin, paprika, onion powder, garlic powder, a little cayenne and sometimes some red pepper flakes if I'm feeling some extra spice. Once the water cooks out a little and it thickens up, I add it to the top of some romaine. Then you can add whatever toppings you like! I love to add plain greek yogurt for extra protein and creaminess instead of sour cream. Then a sprinkle cheese, some black beans, tomatoes, etc and you've got a delicious taco salad!

Honey Glazed Chicken Skewers- I love these skewers and like to serve them over couscous or brown rice. I like to roast them in the oven and they always come out so moist. Make extra and you have great leftovers for another night!

Strip Steak and Chimichurri- This chimichurri is to die for and I love it served with these potato wedges too.

Chickpea Gnocchi-  If you like gnocchi, these are so much easier and quicker to make! Not to mention they are full of protein and fiber, so they are much better for you then traditional gnocchi. The kneading is especially important.

Vodka Sauce with Zucchini Noodles- (Click here for Sauce recipe link) I have been making this sauce for years. It's quick, easy and super flavorful. I love it on gnocchi as well, but it's great with zucchini noodles for a light dinner that doesn't sacrifice flavor. I like to specialize my zucchini myself and then saute them in a pan for a few minutes to barely soften them. Then top with the vodka sauce and sprinkle with Parmesan.

Roasted Tomato Soup- (Click here for recipe link) I think I've shared this recipe before but it's so delicious. It's one of my all time favorite soup recipes and such a great winter comfort food. It takes a little longer than the other recipes but I included it because it's a great one to make a big batch on a Sunday and then freeze it for easy dinner during the week. I always make a lot of this when I have fresh tomatoes from my dad's garden.
